We took Heathcote Shiraz, gave it 120 hours on skins, then introduced it to our 3608 Bartender’s Cut Gin. The result is a juicy collision of blackberry, plum and dark cherry, brought together somewhere between vineyard and spirit — exactly where we like it. Keep it cold. Refrigerate after opening. Best enjoyed within three months.
Designed to be drunk, neat over ice, with a fat slice of blood orange. The dark fruit does the talking, the gin does the heavy lifting, and you get to take the credit.
Muddle fresh yellow peach or slices of Cara Cara orange in a chilled glass, then add the gin and a splash of lemon juice. Fill with ice, top with soda or tonic, and give it a gentle stir.
