Our first peated release began as a bit of distillery tinkering and ended up one of the most interesting whiskeys we’ve made. Cigar box, cherry seed and scorched leather open the show before macerated fig and delicate smoke roll through. Cask strength, full of personality and not here to whisper.Â
The spirit was laid down in a large-format PX cask and left at the front of the distillery, where it spent two years moving through Nagambie heat, cold and a fairly generous angel’s share. By month 24, the whiskey had given up most of its secrets. To build more depth and bring back some colour, we split it into second-fill ex-bourbon barrels with a tighter grain. Six months later, out came something light on its feet but unmistakably peated. Cigar box, cherry seed and scorched leather up front, followed by macerated fig, delicate smoke and a medium-bodied finish. Not bad for an experiment.
Stir PX Barrel Finish Whisky with ice, sweet vermouth and aromatic bitters, then strain into a chilled glass and garnish with a cherry or orange twist.
Stir PX Barrel Finish Whisky with ice, sugar syrup (or a sugar cube) and aromatic bitters, then strain over a large ice cube and finish with an orange peel.
